Ingredients

  • Smoked sausage: 300 g sliced into 1.5 cm rounds (e.g. kielbasa or andouille)
  • Firm cheese: 180 g cut into 2 cm cubes (e.g. cheddar gouda or provolone)
  • Red bell pepper: 1 large cut into 2.5 cm pieces
  • Red onion: 1 small cut into chunks
  • Marinade: 2 tbsp olive oil 1 tsp smoked paprika 1/2 tsp dried oregano 1/4 tsp garlic powder 1/4 tsp freshly ground black pepper
  • Garnish (optional): 1 tbsp fresh parsley chopped

Instructions

Prepare marinade:
In a small bowl whisk together the olive oil smoked paprika oregano garlic powder and black pepper to make the marinade.
Combine ingredients:
In a large bowl combine the sausage slices bell pepper pieces and onion chunks Drizzle the marinade over and toss to coat evenly.
Assemble skewers:
Thread the ingredients onto skewers alternating sausage cheese pepper and onion Begin and end with sausage for better grip.
Preheat grill:
Preheat a grill or grill pan over medium-high heat.
Grill skewers:
Grill the skewers for 10–12 minutes turning occasionally until the vegetables are tender and the sausage is heated through Add the cheese cubes midway through grilling (after 5–6 minutes) to prevent excessive melting.
Serve:
Transfer the skewers to a serving platter sprinkle with chopped parsley and serve hot.
